Artichoke Dip & Chicken Salad

Here you go! These are the recipes I used for the bridal shower I recently hosted. Both are quick and easy! Enjoy!

Artichoke Dip

There are a million variations to artichoke dip, but this is my personal favorite. My mom has been making this recipe as long as I can remember, so when we decided to have artichoke dip at the shower, I knew I had to make it. I’ll admit, as a child, I didn’t really care for it. I’m not really sure if it was the dip I didn’t like or just the Triscuits my mom served with it. Luckily, tastes change as you get older (supposedly every 7 years), and I gave it another shot. YUM.

The original recipe is from one of my favorite cookbooks, that I actually kind of consider a family cookbook: The Texas Experience. The Texas Experience is put out by the Richardson Women’s Club and is a compilation of their members’ recipes. My Nona (my paternal grandmother) and my Great Aunt Jackie (my namesake) were members of the Richardson Woman’s Club years back so many of the recipes are from their friends. My family has been using this cookbook as long as I can remember so I was very excited that I got a copy in my Easter basket this year!

As with most recipes, you can modify slightly here and there and exact amounts aren’t extremely important. Just do what looks good to you. {Note: I actually used about 3/4 Cup greek yogurt and 1/4 Cup mayonnaise because I ran out of mayo!}

1 (6oz) jar of artichoke hearts, drained and finely chopped
1 Tbsp onion, finely chopped
1 Cup mayonnaise
1 cup parmesan cheese, grated
Dash of pepper
 
Combine all ingredients and mix well. Pour into a buttered baking dish. Bake at 350º for 20-25 minutes. Serve with crackers. May be heated in the microwave until hot. 
 
Variation: 1/2 Cup grated Cheddar cheese may be added.
Variation: 1 (4 1/2 oz) can ripe olives may be added. 
My mom’s variation: Use 1/2 Cup mayo & 1/2 Cup Plain Greek Yogurt. 

I’ve never tried the cheddar cheese or olive variation options but I can imagine they’re good too!

 

Chicken Salad

I’ve never been much of a fan of chicken salad until I tried this recipe. I’m not particularly fond of really mayonnaisey things, so I’m always hesitant when I know something contains so much mayo. {Hence the greek yogurt substitution above.} Anyway, I stumbled upon this recipe on Pintrest (shocker, I know) and decided to give it a go. I think it is the perfect combination of crunchy and sweet!

Like the artichoke dip, it was also a hit at the recent wedding shower, so hopefully you enjoy it too! It is great any way you want to serve it – alone, on toast/bread, or crackers – but my personal favorite is on a croissant. Also like the dip, the recipe is pretty flexible… do what sounds good to you! For the shower, I doubled the recipe, but one batch is more than enough for 5-6 people.

3 1/2 Cups chicken, cooked & shredded (can use canned, left over chicken or chicken you cook & shred yourself)
1 Cup celery, diced
2/3 Cup pecans, chopped
1/2 Cup dried cranberries, roughly chopped
2 Tbsp Parmesan cheese, finely grated
2/3 Cup Mayonnaise
1/4 Cup apple juice
3 Tbsp honey
2 tsp apple cider vinegar
1 tsp yellow mustard (prepared, not powder — according to the original recipe, this is optional, but I use it)
1 Tbsp poppy seeds
1/2 tsp onion powder
Salt and pepper to taste
 
In a bowl, whisk together Mayo, apple juice, honey, apple cider vinegar, mustard, poppy seeds, onion powder, salt, and pepper. In another bowl, combine everything else (chicken, celery, pecans, cranberries, and parmesan). Pour the dressing into the bowl with chicken and stir until combined. You can make this ahead and refrigerate it or enjoy it immediately following. Bon a petit! 

Protein Protein Protein

As I’m getting further into my half marathon training, my interest and passion for fitness is growing. I am now thinking that I want to start lifting weights in addition to my usual workouts… I’m sure it’s shocking to people that know me that I would say that, but I just think it’s the best way to become toned, which is one of my new goals. And, I just feel like there’s no better time to start than now. Needless to say, I’m still using protein powder on a regular basis and always looking for new ways to incorporate it into my diet. I’m weird about textures of food, and I do not like the texture of protein shakes, so I have to get a little more creative with how I use it. Here are a couple of my favorite protein recipes that I’ve found thus far.

Banana Protein Pancakes

I love making these for brunch on the weekends! They’re delicious, fulfill my sweet tooth, and keep me full for quite a while! Triple win, if you ask me!

Ingredients:
1 banana
1 egg
1/2 scoop protein (I use Cinnamon Swirl Slap)
Cinnamon to taste
Non-stick Cooking Spray 
Optional: Chia seeds (The most I’d use would be a tablespoon.)
 
Directions:
1. Mash the bananas until smooth.
2. Stir in the egg, protein, cinnamon and chia (if you choose to use it).
3. Heat up a non-stick skillet, or you can use a griddle if you have one, to low-medium heat. I prefer to cook my pancakes on lower heat for a little longer because the batter is pretty moist.
4. Pour the pancake batter onto the skillet/griddle and cook until the edges start to look cooked and sort of pull away from the skillet/griddle.
5. Then, use a non-stick spatula to flip the pancakes. I probably cook for 2-3 minutes on the first side and then 1-2 minutes on the second side.
6. Serve with your choice of topping(s). I prefer maple syrup, but you could do peanut butter or butter, or jelly — really whatever tickles your fancy.

 

Pumpkin Protein Oatmeal

This recipe I found on Pinterest (originally from theFoodette) and is so yummy! I made it twice last week!

Ingredients:
1/2 c quick oats
1/2 c milk (I used skim, and you could add more, I just like my oatmeal a little on the thicker side.)
3/4 scoop of protein powder (I used Cinnamon Swirl Slap, but you could use vanilla.)
2 Tbsp pumpkin puree
~1 tsp pumpkin pie spice
~1 Tbsp brown sugar
 
Directions:
1. Combine all ingredients in a microwavable bowl. Make sure to mix well – the protein shouldn’t be in clumps.
2. Microwave for 2-3 minutes until you reach your preferred done-ness. I like to stop it each minute and stir it. Voila! You have some easy, tasty oatmeal!

Half Marathon Training Program

Well, I’ve chosen my half marathon training program. I looked through a bunch of them, but this one just seemed right up my alley. I found it on Pinterest (shocking, I know) via I Heart Vegetables’ blog but it looks like it is originally from Fitness Magazine. Since this is a 10 week program, I will officially start it on Monday, February 17th. So, since that is a little ways off, for now I’m just continuing to run 3-4 times a week and cross-train the other 3-4 days. At this point, the furthest I’ve gone is 4 miles and boy, it felt good!

What I wore… to work

First, sorry I haven’t blogged in a while. I was busy enjoying the holidays with loved ones.

For today’s post, I’ve decided to go a little bit out of my comfort zone. Selfies aren’t really my thing… except for on Snapchat. 🙂 Anyway, I’ve been thinking lately about how styles and trends change over time and where people draw their inspiration from. I’m not very creative and I definitely wouldn’t describe myself as a fashionista, but I am pretty great at copying other people.

A lot of my outfit ideas come from Pinterest. I feel like this is cliche… but hey! Aren’t ideas and copying what Pinterest is for?!

Another source of inspiration that I unexpectedly stumbled upon one day is Karla Reed’s instagram (karlareed). She posts a lot of outfits that she wears, along with some personal things of course. Someone I follow on insta liked one of her pics and I happened to see it and think it was cute. Naturally, I proceeded to creep through her pictures and decided she was worth the follow! She also has an additional insta account, chicthrifty, where she sells a lot of awesome things that she finds at thrift stores. Turns out, there is a whole little community of instagram stores! I have yet to buy anything from any of them, but they have some pretty awesome deals.

As a twenty-something who hasn’t been in the working world very long, I’m definitely not “rollin’ in the dough.” Most of my clothing and accessory purchases are from the sale section. The thought of buying something full price pretty much makes my stomach turn. Don’t get me wrong, I love a good name brand piece, but I just try to stay away from the name brand prices. (The exception is if it’s from a store like Forever 21 or TJ Maxx.) I wish I had time to thrift more, but it never seems to work out and when I do get around to it, I never find anything great. I guess I’ll leave that to Karla.

My other trick to dressing cute on a budget, is wearing older pieces. Everyone has those clothes that get pushed to the back of your closet and you just don’t seem to wear them as often anymore, if ever. With the help of Pinterest as some inspiration, you can learn how to style those pieces differently, which will give you so many more outfit options!

All this leads me to what I wore this week. As my first “What I wore” post, I’ve decided to share what I wore to work. I love dressing up for work, but sometimes it can have its fair share of challenges, for example, when the wind chill is in the single digits. Luckily, it wasn’t that cold this week! The dress code at my office is business casual. To me, this is challenging because people have very different ideas of what business casual is. I work at a non-profit, so our business casual is a little more casual than say, if you work at a bank or law firm.

Finally, here are the selfies! Ignore the mess behind me that is my bedroom.

Thursday’s outfit is, again, one of my “go to” outfits. It’s cute, and super easy to throw together when you’ve pushed snooze a few too many times. Anytime you wear a sweater over a button up, you can wear it tucked in or untucked. I alternate, but Thursday I went with tucked.

Yay! It’s Friday, which means this crazy week is almost over!! At my office, like most, Friday is jeans day. When I first started working I didn’t wear jeans very often on Fridays just because I love wearing skirts. However, in the fall and winter, especially when it’s freezing cold, you best believe I take advantage of every opportunity to wear jeans!

Barbeque Chicken Salad Deliciousness

As you’ll quickly learn, I LOVE COOKING. Needless to say, this will be the first of many recipe posts.

I have endless go-to meals that I keep ingredients for on hand so that I can whip them up in a second’s notice, but I also enjoy trying new things. I found this particular recipe on Pinterest. It is originally from the Ambitious Kitchen blog, but I renamed it. I have made it a couple of times for my (somewhat picky) boyfriend and we can’t get enough of it. It is healthy, full of flavor and pretty inexpensive to make — a triple threat if you ask me!

Barbeque Chicken Salad

2 large romaine hearts
1 cup of pulled, cooked chicken breast
1 can (15.5oz) chickpeas, drained and rinsed
1 cup grape tomatoes, sliced in halves
3/4 cup sweet corn
1/4 cup crumbled goat cheese
1/3 cup fresh cilantro, washed and chopped
1 avocado, diced
1 small red onion, diced
Barbeque dressing to taste

Instructions: Throw everything in a bowl, toss and enjoy!

The reason I love cooking so much is because you can make any recipe your own. For example, the original recipe does not include red onion, but I love it, so I threw it in. If you don’t want to cook your own chicken breasts, buy an already cooked rotisserie chicken or even canned chicken will do. If you have any other kind of tomato, use it and just chop it into bite sized pieces or wedges. The first time I made this, I used corn that I steamed and cut off the cob. This time, corn on the cob wasn’t in season, so I substituted canned corn (drained) and it was just as good. My boyfriend isn’t a huge cilantro fan, so this time I left it out. The best part of this recipe, to me, is the barbeque sauce as dressing. YUM. You can use as much or as little of your favorite barbeque sauce as you like. One of my favorites is Head Country (original flavor), which is coincidentally made in Oklahoma. If you’re trying to watch your calorie intake, a trick I learned from my mom is to use half of the amount of the flavored dressing (Barbeque sauce in this case) and half of a light balsamic vinaigrette. My favorite balsamic vinaigrettes are Newman’s Own and even Kraft’s light version.
